Sourwood Honey

The signature honey of the southern Appalachians, sourwood is a monofloral variety collected from sourwood trees, which bloom in early July.  The flow is highly variable and tends to be boom or bust.  Sourwood is a light sweet honey with a mildly tangy undertone.  It is typically pretty liquidy, but very inert, and it's unlikely to crystallize or ferment (although this batch crystalized slightly, probably due to the bees collecting another nectar at the same time.  Some jars may have a few large crystals in the top of them.)  The color of this honey varies depending on the acidity of the soil in which the tree is growing.  

Every batch of our raw unfiltered honey is curated for maximum flavor and terroir.  We crush and strain our honeycomb, instead of using an extractor, and never indiscriminately mix honey varieties, so the honey you are tasting is as authentic as possible, exactly as the bees made it!

One pint plastic jar.  Approximately 24 ounces by weight.
